when we think of gifted food marshmallow comes to mind, who don't love marshmallow and believe me this is the perfect recipe for it..
this post will act like a guide more than recipe because yesterday when I made it was disaster literally, but it was perfect, delicious and moused when you eat it and lovely more than any marshmallow I have bought ever.
ingredients
1\3 corn syrup
2 cups of sugar
1 cup of water
2 1\2 spoon gelatin powder
2 tea spoons of vanilla extract
1\4 tea spoon salt

1\4 cup of granulated sugar
1 cup of core starch
mix them
---
1- line your baking pan with foil because the marshmallow is sticky and spread over it 2 spoons of the mixture of granulated sugar and corn starch
2- warm 1\2 of water and then put it in the mixture bowl and spread the gelatin on it, then stir it for one round to two only , just to make sure that most of the gelatin was covered with water. and then leave it at least for 15 minutes.
3- on the other side in a pan put the corn syrup + the rest of the water + the sugar+salt an leave it on medium heat and and don't stir it right now.
4- when it comes to boil stir it for just 1-3 times and leave it for 6-8 minutes or until the degree reached 240 F, it you that you leave it more and the mixture is coming browny on the sides please don't panic this what was happened with me and I just added a couple of spoons of boiled water to the mixture
5- then go back to the gelatin mixture and flip it to low to break it and then put the boiling mixture on it gently and then higher the speed from time to time until you reach the higher speed
6- leave it until the mixture is fluffy and white and wait until it is form and then add the vanilla, this process will be about 10 -12 minutes
7- now put the mixture in the baking pan (you need to work quickly because it will be more are more sticky ) and try to straighten it up with spatula that is covered with oil
8- spread for about 2 spoons of the mixture of granulated sugar and corn starch over it and cover it with plastic rap then leave it over night or for 4-6 hours to cool
9- when it is cool and form take a sharp knife and cover it with corn starch mixture and cut it in to cube or what ever shape you want
don't forger to cover the cubes with corn starch mixture and take out the excess.
