sometimes you want to eat something not regular, this recipe is what you want to do ^_^
ingredients:
vegetable mix :
2 carrots
3\4 cup of corn
2 large eggplant
1\3 cup broccoli
or actually any kind of vegetables but with eggplant
2 spoons of chopped onion
1\2 table spoon of regular spices
salt
2 table spoons of oil
white sauce
2 table spoons of flour
2 table spoons of butter
1\2 L milk
pinch of salt and black pepper
Italian sauce
300 g of minced meat
1 pepper
1 spoon chopped garlic
1 or 250g tomato can
1\2 tea spoon of black pepper
1\2 tea spoon garlic powder
1\2 tea spoon of oregano
2 spoons of oil or butter
others:
1 cup mozzarella cheese
1\2 cup water
----
1- lets start with the eggplant do it as in this link http://cookandmakebook.blogspot.com/2014/04/light-fried-eggplant.html but make them thin
2- the other vegetables cut then in to fine pieces as you like
3- on frying pan put the two spoons of oil with the onion and stir them on medium heat until they are yellow
4- put the carrots and the broccoli in with the spices & 1\4 cup of water and close the pan on them.. stir from time to time until they are cooked
5- then add the corn with salt leave them couple of minutes or until the excess water evaporates then close the heat and leave them aside
then the italian sauce
1- in frying pan put the oil and the garlic with chopped pepper on a medium heat until they are have little browny on some sides and then add the meat
2- add the black pepper and stir from while to while until they are cooked then add the tomato with the garlic powder and the other 1\4 cup of water and some salt and try to stir until it boils
3- then let them boiling for 5-7 minutes and add the oregano
4- stir couple of times on turn the heat of and keep them aside
the white sauce( try making it last)
1-on another pan and on low heat drop the butter until it is melted
2- add the flour and stir quickly there will be like clumps of little browny mix that what we want
3- then quickly add the milk while whisking quickly so that there is no clumps and leave them to boil... don't forget to stir from time to time
4- add salt and pepper and stir, the sauce should be thick if its not add tea spoon of flour and stir wait for 2 minutes while boiling and it will be done
now pre heat the oven in to medium heat
an a pyrex pan spread 2-3 spoons of the white sauce and them line the eggplant you should line 1\3 of them and don't worry if there was some space in between, then put 1\2 of meat mixture and then 1\2 of vegetables mixture ,
spread 2 spoons of mozzarella and return the layers again ( like lasagna) and put the last layer the eggplant on top of it put the whole other mixture of the white sauce and top it with mozzarella
put it in the oven for about 15-20 minutes and it is done
i know this seems alot of work but its doesn't and if it is it really worth it
