light fried Eggplant..

when frying the eggplant... it just seems so heavy and not suitable for out stomach whole time because it absorbs oil too much, actually more than any vegetable.. 
so this is how to fry them without the fear of all this problems

before frying them for about 2 hours cut them in to slices with the thickness that prefer and get a bowl that is full of water with 1\2 tea spoon of salt 
and then drop them in the bowl 
make sure that the eggplant slices are all covered


of course the slices will float so just put another plate on them and leave them for couple of hours 
you can even leave them  up to 1 day in the refrigerator..
this way the eggplant will absorbs the water instead of the oil  

don't forget after frying them to use absorbent papers to take out the oil that stuck on the surface
